Onions and Rib-Eye
2 teaspoons garlic powder 2 teaspoons salt 1 teaspoon ground cumin 1 teaspoon dried oregano leaves, crushed 1/2 teaspoon ground red pepper 2 (1- to 1 1/2-pounds each) boneless beef rib-eyes, cut 1-inch thick 2 sweet onions, sliced salt and pepper
Combine garlic powder, salt, cumin, oregano and red pepper in a small bowl. Sprinkle over both sides of steaks; press to adhere. Heat charcoal 30 minutes until covered with a light layer of gray ash, or heat gas grill 10 minutes with lid closed.
Cut onions into 1/2-inch thick slices. Spray generously with olive oil cooking spray. Season with salt and pepper. Grill onions over medium heat about 10 minutes, turning. Grill steaks 4 to 7 minutes per side, until internal temperature reaches 140 degrees for medium- rare or 150 degrees for medium.
